Purple Top Turnips with Greens
Turnips are a root vegetable that when eaten raw are crisp and with a spicy bite. When cooked that spice softens and they become sweet. They are earthy and delicious!
- My favorite way to eat turnips is roasted with greens
- Grated up in a green salad or chicken salad
- Sauteed on the stovetop with water for 7-9 mins. Until soft.
Purple Potatoes
You know how great potatoes are and purple potatoes taste about the same just a fun color!
- Roasting. Chop up and toss with oil and seasoning. Roast at 425°F for 45 mins. They can be hard to tell if they are golden in color but you can tell when they are crispy.
- Great as mashed potatoes
Purple Kale
- Kale Chips
- Massaged kale salad. Chop up kale into bite-sized pieces. Massage in a bowl with olive oil, salt, and pepper with very clean hands. Kale will soften after a few minutes. You can keep massaging with half an avocado and/or add any of your favorite salad fixings.
- Added to smoothies
Butter Crunch Lettuce
Great as a salad or added to sandwiches or burgers.
Green Beans
- Green beans and bacon I like to eat this over buttered egg noodles.
- Sauteed on the stovetop with water for 5-6 mins. Until soft.
