Peas- 10 weeks. Tender, likes cooler weather but will not handle frost Little Snowpea White Pea, Oregon Giant Snow Pea, Oregon Sugar Pod II Snow Pea
Potatoes- 12 weeks. Frost Hardy, protected underground but harvest before the ground freezes Yukon Gold, purchased locally
Spinach- 7 weeks. Frost Hardy, can survive the winter and grow again in early spring. Harvest using cut and come again Organic Butterflay Spinach Seeds

Lettuce- 4-7 weeks. Frost tolerate but can cause some leaf damage. Harvest early using cut and come again Lettuce Harris' Blend
Mustard greens- 4 weeks. Frost Hardy, can survive the winter and grow again in early spring. Harvest early using cut and come again Mustard Mizuna
Radishes- 6 weeks in fall. Frost Hardy, grows slower in cooler weather but can survive a hard freeze White Icicle Radish, French Breakfast Radish, Chinese Red Meat Radish, Singara Rat's Tail Radish, Sakurajima Giant Radish
Weeks from seed to harvest
Cut and come again method- when you cut a few outer leaves from a plant instead of cutting the whole thing. The plant will continue to grow and produce new leaves.
